We should never heat olive oil. It is only meant to be used cold. Cooking with olive oil which is a monounsaturated oil, turns it to a trans fat, which is not a good thing as we are well aware. My rule of thumb is to save olive oil for salads and dipping. Instead of poisoning my body and ruining a great oil, I use coconut oil for cooking. Coconut oil will fare much better under the rigors of being heated.
