FRENCH POTATO SALAD
6 MEDIUM RED POTATOES,UNPEELED, SLICED
3 TBSP OLIVE OIL
1 tsp WHITE WINE VINEGAR
1 tsp DIJON MUSTARD (GLUTEN FREE)
1/2 tsp SALT
1/4 CUP CHOPPED ITALIAN PARSLEY
1 SPRING ONION, CHOPPED
1 TBSP CHOPPED BASIL
BOIL POTATOES IN SALTED WATER UNTIL TENDER. RINSE AND DRAIN AND ALLOW TO COOL A LITTLE.
IN A GLASS JAR WITH A LID COMBINE THE OLIVE OIL, VINEGAR, MUSTARD, AND SHAKE WELL.
TRANSFER THE POTATOES TO SERVING BOWL AND POUR THE DRESSING OVER THE STILL WARM POTATOES
AND TOSS GENTLY TO COAT. COOL A LITTLE MORE THEN STIR IN THE PARSLEY, SPRING ONION, AND BASIL
AND SEASON WITH SALT AND PEPPER.
SERVE WARM OR AT ROOM TEMPERATURE.
