GLUTEN-FREE & DAIRY FREE SPINACH WITH GARBANZO BEANS & RAISINS

 

 

1 TBSP OLIVE OIL

1 GARLIC CLOVE, CRUSHED

1/4 TSP CRUSHED RED PEPPER FLAKES

1 CAN GARBANZO BEANS, DRAINED

2 BUNCHES FRESH SPINACH

1/4 CUP GOLDEN RAISINS

1/2 TSP SALT

 

In Dutch Oven, heat oil with garlic over medium heat untl garlic is golden; discard garlic. Add crushed red pepper to oil and cook a few seconds. Stir in gabanzo beans and cook, stirring, 2  minutes, or until hot. Increase heat to high. Add spinach, raisins and salt. Cook, stirring, 2 to 3 minutes, just until spinach wilts.
